Haemul Pajeon (Seafood Green Onion Pancake)

Ingredients
- 1 bunch Green onions (scallions)
- 1 cup Assorted seafood (shrimp, squid, clams)
- 1 cup Korean pancake mix (Buchimgae)
- 0.75 cup Ice cold water
- 1 large Egg
- 3 tbsp Vegetable oil
- 1 tbsp Soy sauce(optional)
- 1 tsp Rice vinegar(optional)
Instructions

Wash and trim green onions, cutting them to fit the size of your frying pan.

Roughly chop the seafood into bite-sized pieces and pat dry with paper towels.

In a bowl, whisk together the pancake mix and ice cold water until just combined. Do not overmix.

Heat 2 tablespoons of oil in a non-stick skillet over medium-high heat. Lay the green onions in a flat, even layer in the pan.

Pour the batter over the green onions, spreading it evenly to the edges.

Distribute the seafood pieces over the top of the batter, pressing them in slightly.

Lightly beat the egg and pour it over the top of the pancake.

Cook for 4-5 minutes until the bottom is golden brown and crispy.

Flip the pancake carefully. Add the remaining tablespoon of oil around the edges and cook for another 3-4 minutes.

Serve hot with a dipping sauce made of soy sauce and rice vinegar.
