Ingredients

Servings:4
  • 1 1/2 pounds Boneless, skinless chicken breasts
  • 1/4 cup Extra virgin olive oil
  • 3 tablespoons Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 3 cloves Garlic cloves, minced
  • 1 teaspoon Fresh rosemary, chopped
  • 1 teaspoon Fresh thyme leaves
  • 1/2 teaspoon Dried oregano
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1/4 teaspoon Red pepper flakes(optional)

Instructions

  1. 1

In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, rosemary, thyme, oregano, salt, pepper, and red pepper flakes.

  2. 2

Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 3/4 inch.

  3. 3

Place the chicken in a large resealable bag or shallow dish and pour the marinade over it, ensuring all sides are coated.

  4. 4

Refrigerate and marinate for at least 30 minutes, or up to 4 hours for maximum flavor.

  5. 5

Preheat your grill to medium-high heat (about 400°F) and lightly oil the grates.

  6. 6

Remove chicken from the marinade and grill for 6 to 7 minutes per side, or until the internal temperature reaches 165°F.

  7. 7

Remove the chicken from the grill and transfer to a plate.

  8. 8

Cover loosely with foil and let the meat rest for 5 minutes before slicing to keep it juicy.
