Quick-grilling chicken breast chunks marinated in a nut-free jerk spice blend.

In a large bowl, whisk together the green onions, ginger, garlic, scotch bonnet, soy sauce, lime juice, brown sugar, allspice, thyme, and vegetable oil.
Add the chicken cubes to the marinade and toss until every piece is thoroughly coated.
Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
If using wooden skewers, soak them in water for 20 minutes to prevent burning on the grill.
Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece for even cooking.
Preheat your grill to medium-high heat and lightly oil the grates.
Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
Remove from the grill and let rest for 5 minutes before serving with extra lime wedges.
