Ingredients
- 2 cups Green papaya, shredded
- 2 Garlic cloves
- 2 Thai bird's eye chilies
- 0.5 cup Green beans, cut into 1-inch pieces
- 0.5 cup Cherry tomatoes, halved
- 2 tablespoons Roasted peanuts
- 1 tablespoon Dried shrimp(optional)
- 2 tablespoons Fish sauce
- 2 tablespoons Lime juice
- 1 tablespoon Palm sugar
Instructions

In a large mortar, pound the garlic and chilies with a pestle until broken into small pieces.

Add the palm sugar, fish sauce, and lime juice. Mix and pound slightly to dissolve the sugar.

Add the dried shrimp (if using) and green beans. Pound lightly just to bruise the beans.

Add the shredded green papaya and cherry tomatoes. Use the pestle to pound while simultaneously using a large spoon to toss the ingredients together for about 1-2 minutes.

Add the roasted peanuts and give it one final light toss.

Taste and adjust seasoning; it should be a balance of salty, sour, and spicy. Serve immediately.
