Ingredients

  • 2 cups, shredded Green Papaya
  • 2 cloves Garlic
  • 2 pieces Bird's Eye Chilies
  • 0.5 cup, cut into 1-inch pieces Green Beans
  • 6 halved Cherry Tomatoes
  • 2 tablespoons Roasted Peanuts
  • 1 tablespoon Dried Shrimp(optional)
  • 2 tablespoons Fish Sauce
  • 2 tablespoons Lime Juice
  • 1 tablespoon Palm Sugar

Instructions

  1. 1

Peel the green papaya and shred it into thin strips using a julienne peeler or a knife.

  2. 2

In a large mortar and pestle, pound the garlic and chilies until broken down into small pieces.

  3. 3

Add the dried shrimp (if using) and peanuts, pounding lightly to break them up.

  4. 4

Add the green beans and pound gently just to bruise them.

  5. 5

Add the palm sugar, fish sauce, and lime juice. Stir with a spoon and pound lightly to dissolve the sugar.

  6. 6

Add the shredded papaya and cherry tomatoes to the mortar.

  7. 7

Use a spoon to toss the salad while lightly pounding with the pestle to ensure the dressing absorbs into the papaya.

  8. 8

Transfer to a plate and garnish with extra roasted peanuts.
