- 2 cups, shredded Green Papaya
- 2 cloves Garlic
- 2 pieces Bird's Eye Chilies
- 0.5 cup, cut into 1-inch pieces Green Beans
- 6 halved Cherry Tomatoes
- 2 tablespoons Roasted Peanuts
- 1 tablespoon Dried Shrimp(optional)
- 2 tablespoons Fish Sauce
- 2 tablespoons Lime Juice
- 1 tablespoon Palm Sugar
Instructions

Peel the green papaya and shred it into thin strips using a julienne peeler or a knife.

In a large mortar and pestle, pound the garlic and chilies until broken down into small pieces.

Add the dried shrimp (if using) and peanuts, pounding lightly to break them up.

Add the green beans and pound gently just to bruise them.

Add the palm sugar, fish sauce, and lime juice. Stir with a spoon and pound lightly to dissolve the sugar.

Add the shredded papaya and cherry tomatoes to the mortar.
