- 1 1/2 cups whole milk
- 2 pieces large eggs
- 2 tablespoons melted butter
- 1 tablespoon granulated sugar
- 1/4 teaspoon salt
- 1 cup walnuts, finely crushed
- 1/2 cup thyme honey
- 1 teaspoon ground cinnamon
- 1 teaspoon vegetable oil for the pan

In a large mixing bowl, whisk together the flour, sugar, and salt.

Gradually whisk in the milk, eggs, and melted butter until the batter is smooth and free of lumps.

Let the batter rest at room temperature for 15 minutes to allow the gluten to relax.

Heat a non-stick skillet over medium heat and lightly grease with a tiny amount of oil.

Pour a small ladle of batter into the pan, swirling it quickly to cover the bottom in a thin layer.

Cook for 1-2 minutes until the edges golden, then flip and cook for another 30 seconds.

In a small bowl, mix the crushed walnuts with the ground cinnamon.
