Ingredients

Servings:6
  • 4 large Sweet potatoes (peeled and sliced into 1/2 inch rounds)
  • 1/2 cup Unsalted butter
  • 1/2 cup Granulated sugar
  • 1/2 cup Light brown sugar (packed)
  • 1 tablespoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 2 cups Miniature marshmallows(optional)
  • 2 tablespoons Orange juice

Instructions

  1. 1

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with butter.

  2. 2

Layer the sliced sweet potatoes evenly in the prepared baking dish, overlapping them slightly.

  3. 3

In a small saucepan over medium heat, melt the butter and stir in the granulated sugar, brown sugar, cinnamon, nutmeg, salt, and orange juice.

  4. 4

Whisk the sauce constantly until the sugar is dissolved and the mixture begins to bubble slightly, then stir in the vanilla extract.

  5. 5

Pour the hot butter and sugar mixture evenly over the sweet potatoes, ensuring every slice is coated.

  6. 6

Cover the dish tightly with aluminum foil and bake for 45 minutes.

  7. 7

Remove the foil, baste the potatoes with the syrup from the bottom of the dish, and bake uncovered for another 15-20 minutes until the syrup is thick and potatoes are tender.

  8. 8

If using marshmallows, sprinkle them over the top during the last 5 minutes of baking until toasted and golden brown.
