- 4 links Fresh Chorizo Sausages
- 4 pieces Baguette or Ciabatta Rolls
- 1 large Red Onion
- 1/2 cup Red Wine Vinegar
- 1 cup Fresh Parsley
- 3 minced Garlic Cloves
- 1 teaspoon Dried Oregano
- 1/3 cup Extra Virgin Olive Oil
- 1/2 teaspoon Red Chili Flakes(optional)
- 1 tablespoon Granulated Sugar
- 1 teaspoon Kosher Salt

Thinly slice the red onion and place in a jar with red wine vinegar, sugar, and a pinch of salt; let sit for at least 20 minutes.

Prepare the chimichurri by finely chopping parsley and mixing it with minced garlic, oregano, olive oil, chili flakes, and a splash of vinegar.

Preheat your grill or cast-iron skillet to medium-high heat.

Butterfly the chorizo sausages by slicing them lengthwise almost all the way through so they open like a book.

Place the sausages on the grill, cut-side down first, and cook for 5-7 minutes per side until charred and cooked through.

Slice the bread rolls open and toast them lightly on the grill until golden brown.
