Ingredients

Servings:4
  • 4 links Fresh Chorizo Sausages
  • 4 pieces Baguette or Ciabatta Rolls
  • 1 large Red Onion
  • 1/2 cup Red Wine Vinegar
  • 1 cup Fresh Parsley
  • 3 minced Garlic Cloves
  • 1 teaspoon Dried Oregano
  • 1/3 cup Extra Virgin Olive Oil
  • 1/2 teaspoon Red Chili Flakes(optional)
  • 1 tablespoon Granulated Sugar
  • 1 teaspoon Kosher Salt

Instructions

  1. 1

Thinly slice the red onion and place in a jar with red wine vinegar, sugar, and a pinch of salt; let sit for at least 20 minutes.

  2. 2

Prepare the chimichurri by finely chopping parsley and mixing it with minced garlic, oregano, olive oil, chili flakes, and a splash of vinegar.

  3. 3

Preheat your grill or cast-iron skillet to medium-high heat.

  4. 4

Butterfly the chorizo sausages by slicing them lengthwise almost all the way through so they open like a book.

  5. 5

Place the sausages on the grill, cut-side down first, and cook for 5-7 minutes per side until charred and cooked through.

  6. 6

Slice the bread rolls open and toast them lightly on the grill until golden brown.

  7. 7

Spread a generous spoonful of chimichurri on the bottom bun, place the grilled chorizo on top, and crown with a heap of pickled red onions.

  8. 8

Close the sandwich and serve immediately while the sausage is hot and juicy.
