- 2 lbs Ground Chuck (80/20 blend)
- 8 slices Thick-cut Applewood Smoked Bacon
- 4 slices Aged Sharp Cheddar Cheese
- 4 pieces Brioche Buns
- 1 large Red Onion
- 2 tbsp Balsamic Vinegar
- 1 cup Arugula
- 4 tbsp Garlic Aioli
- 2 tbsp Unsalted Butter
- 1 tsp Kosher Salt
- 1 tsp Coarse Black Pepper

Cook the bacon slices in a large skillet over medium heat until crispy, then drain on paper towels.

In the same skillet, sauté sliced red onions in the bacon fat until soft, then add balsamic vinegar and simmer until caramelized.

Divide the beef into four 8-ounce portions and gently shape into patties, making a small indentation in the center of each.

Season both sides of the patties generously with salt and pepper just before cooking.

Grill or sear the patties over medium-high heat for 4-5 minutes per side for medium-rare.

Place a slice of cheddar on each patty during the last minute of cooking and cover with a lid to melt.

Butter the brioche buns and toast them on the grill or in a pan until golden brown.
