Golden Garlic Egg Fried Rice

Ingredients
- 3 cups Day-old cooked jasmine rice
- 3 pieces Large eggs (yolks separated)
- 6 cloves Garlic cloves, minced
- 3 tablespoons Vegetable oil
- 1 tablespoon Light soy sauce
- 1 teaspoon Toasted sesame oil
- 2 stalks Green onions, sliced
- 1/2 teaspoon Salt
- 1/4 teaspoon White pepper
- 1 tablespoon Unsalted butter(optional)

Place the cold, day-old rice in a bowl and break up any large clumps with your hands.

Whisk the 3 egg yolks and pour them over the rice, stirring until every grain is evenly coated and yellow.

In a cold wok or large skillet, add the vegetable oil and minced garlic. Turn heat to medium-low.

Fry the garlic slowly until it becomes golden brown and crispy, then remove half of the garlic and set aside for garnish.

Increase heat to high and add the egg-coated rice to the remaining garlic oil in the wok.

Stir-fry constantly for 3-5 minutes until the egg dries around the rice and the grains begin to 'dance' or jump in the pan.

Season with soy sauce, salt, white pepper, and the optional butter; toss well to incorporate.

Fold in the green onions and sesame oil, then serve immediately topped with the reserved crispy garlic.
