- 3 large Green Plantains
- 2 cups Vegetable Oil
- 6 cloves Fresh Garlic Cloves
- 1 cup Warm Water
- 1 teaspoon Sea Salt
- 1 tablespoon Lime Juice(optional)
- 1 tablespoon Fresh Parsley(optional)
- 1/2 teaspoon Black Pepper

Peel the green plantains and cut them into 1-inch thick rounds.

In a small bowl, crush the garlic cloves and mix with warm water and sea salt to create a garlic bath.

Heat the vegetable oil in a heavy skillet over medium heat until it reaches 325°F.

Fry the plantain rounds for about 3-4 minutes per side until they are light golden but not browned.

Remove the plantains from the oil and drain on paper towels; use a tostonera or the bottom of a heavy glass to flatten them to about 1/4 inch thickness.

Quickly dip each flattened plantain into the garlic water mixture, shaking off any excess liquid carefully.

Return the flattened plantains to the hot oil and fry for an additional 2-3 minutes until deep golden and crispy.

Drain on paper towels once more and sprinkle with additional sea salt and chopped parsley while hot.
