Ingredients
- 4 large catfish fillets
- 1/2 cup unsalted butter
- 4 cloves fresh garlic, minced
- 2 tablespoons roasted garlic powder
- 1 tablespoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon cayenne pepper
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 whole lemon wedges(optional)

Pat the catfish fillets completely dry with paper towels to ensure a good sear.

In a small bowl, combine the roasted garlic powder, paprika, onion powder, thyme, oregano, cayenne, salt, and pepper.

Generously coat both sides of each fillet with the dry spice mixture, pressing it into the flesh.

Melt the butter in a small saucepan over low heat and stir in the fresh minced garlic; set aside for basting.

Heat a large cast-iron skillet over high heat until it is extremely hot and just starting to smoke.

Place the fillets in the dry skillet and cook for 2-3 minutes until the bottom is charred and black.

Flip the fish and immediately pour the garlic butter over the fillets while they cook for another 2-3 minutes.

Remove from heat once the fish flakes easily and serve immediately with lemon wedges.
