- 3 large Ripe plantains (yellow with black spots)
- 2 cups Vegetable oil for frying
- 1 teaspoon Garlic salt
- 2 tablespoons Fresh parsley, finely chopped
- 1/2 teaspoon Garlic powder
- 1/4 teaspoon Onion powder
- 1/4 teaspoon Black pepper
- 1 pinch Red pepper flakes(optional)

Peel the plantains by cutting off the ends and slicing the skin lengthwise before pulling it back.

Slice the plantains diagonally into 1/2-inch thick oval pieces to ensure maximum surface area for seasoning.

In a small bowl, whisk together the garlic salt, garlic powder, onion powder, and black pepper.

Heat the vegetable oil in a large skillet over medium-high heat until it reaches approximately 350 degrees Fahrenheit.

Carefully place the plantain slices in the hot oil in a single layer, working in batches if necessary to avoid crowding.

Fry for 2-3 minutes per side until they are golden brown and the edges are slightly caramelized.

Remove the plantains with a slotted spoon and drain them briefly on paper towels.
