Ingredients
- 3 lbs Chicken wings, split into flats and drums
- 1 tablespoon Aluminum-free baking powder
- 1 teaspoon Kosher salt
- 1/2 teaspoon Black pepper
- 1/2 teaspoon Garlic powder
- 4 tablespoons Unsalted butter
- 1/2 cup Frank's RedHot Original Cayenne Pepper Sauce
- 1 tablespoon Honey(optional)
- 4 stalks Celery sticks(optional)
- 1/2 cup Blue cheese dressing(optional)
Instructions
- 1
Pat the chicken wings completely dry with paper towels; moisture is the enemy of crispiness.
- 2
In a large bowl, toss the wings with baking powder, salt, pepper, and garlic powder until evenly coated.
- 3
Place a wire rack over a foil-lined baking sheet and arrange wings in a single layer, ensuring they do not touch.
- 4
Place in a cold oven and turn the heat to 425°F (220°C); this gradual heating helps render the fat.
- 5
Bake for 45 to 50 minutes, flipping the wings halfway through, until the skin is golden brown and very brittle.
- 6
While wings bake, whisk melted butter, hot sauce, and honey in a large bowl until emulsified.
- 7
Remove wings from the oven and immediately toss them in the buffalo sauce mixture until well coated.
- 8
Serve immediately with celery sticks and blue cheese dressing on the side.
