Easy Home Style Peking Duck

Ingredients
- 5 lbs Whole duck (cleaned and patted dry)
- 1/4 cup Honey
- 3 tablespoons Soy sauce
- 1 teaspoon Five-spice powder
- 4 cups Boiling water
- 1 tablespoon Rice vinegar
- 1 inch piece Fresh ginger
- 1/2 cup Hoisin sauce (for serving)
- 4 stalks Spring onions
- 12 pieces Mandarin pancakes or flour tortillas

Clean the duck and remove excess fat, then pat the skin completely dry with paper towels.

Place the duck on a rack in the sink and pour boiling water over the skin to tighten it, then pat dry again.

Mix the honey, soy sauce, rice vinegar, and five-spice powder in a small bowl to create the glaze.

Brush the glaze evenly over the entire duck and let it sit uncovered in the refrigerator for at least 4 hours to dry the skin.

Preheat your oven to 375°F (190°C) and place the duck breast-side up on a roasting rack over a tray filled with an inch of water.

Roast for 45 minutes, then flip the duck and roast for another 45 minutes until the skin is dark brown and crispy.

Let the duck rest for 15 minutes before carving into thin slices.
