- 1 lb Ground beef (90% lean)
- 2 tbsp Taco seasoning
- 3 cups Cooked white or brown rice
- 15 oz can Black beans, drained and rinsed
- 1 cup Corn kernels (frozen or canned)
- 1/2 cup Shredded cheddar cheese
- 2 cups Romaine lettuce, shredded
- 1/2 cup Salsa
- 4 tbsp Sour cream(optional)
- 1/4 cup Fresh cilantro, chopped(optional)
- 1 wedge Lime(optional)

In a large skillet over medium-high heat, brown the ground beef until no pink remains, breaking it into small crumbles.

Drain any excess grease from the skillet and return to the heat.

Stir in the taco seasoning and a splash of water, simmering for 2-3 minutes until the sauce thickens.

Warm the black beans and corn in a small saucepan or microwave until heated through.
