Ingredients
- 2 cups Fresh coriander leaves (cilantro), tightly packed
- 1/2 cup Fresh or frozen grated coconut
- 3 pieces Green chilies, stemmed
- 1 inch Fresh ginger, peeled and chopped
- 1 tablespoon Roasted chana dal (dalia)
- 1 tablespoon Lemon juice
- 1/2 teaspoon Sugar(optional)
- 3/4 teaspoon Salt
- 1/2 teaspoon Cumin seeds
- 1/4 cup Water

Thoroughly wash the coriander leaves and tender stems in cold water to remove any grit.

Roughly chop the coriander leaves to help them blend more evenly.

Place the grated coconut, green chilies, ginger, and roasted chana dal into a high-speed blender or chutney jar.

Add the cumin seeds, salt, sugar, and lemon juice to the blender.

Add the washed coriander leaves on top of the other ingredients.

Pour in 2 tablespoons of water initially to start the blending process.

Pulse until the mixture reaches a smooth, consistent paste, adding more water one tablespoon at a time if needed.

Taste and adjust salt or lemon juice before transferring to a clean glass jar.
