In a heavy saucepan, whisk together the sugar, flour, and salt until well combined.
Gradually stir in the milk over medium heat, whisking constantly to prevent lumps from forming.
Cook the mixture for about 10 minutes, stirring continuously, until it thickens enough to coat the back of a spoon.
Temper the eggs by slowly whisking one cup of the hot milk mixture into the beaten egg yolks, then pour the yolk mixture back into the saucepan.
Continue cooking for 2 more minutes until thick and bubbly, then remove from heat and stir in the butter and vanilla extract.
In a 2-quart baking dish, create a layer of vanilla wafers on the bottom, followed by a layer of sliced bananas.
Pour one-third of the warm custard over the bananas, then repeat the layers of wafers, bananas, and custard twice more.
Cover the dish with plastic wrap pressed directly onto the surface of the pudding and refrigerate for at least 4 hours before serving.
