Ingredients
- 1 cup Dried chickpeas
- 1 teaspoon Baking soda
- 1/2 cup Tahini
- 1/4 cup Fresh lemon juice
- 2 cloves Garlic cloves
- 2 tablespoons Extra virgin olive oil
- 1/2 teaspoon Ground cumin
- 1 teaspoon Sea salt
- 3 tablespoons Ice water
- 1/4 teaspoon Paprika(optional)
- 1 sprig Fresh parsley(optional)

Soak the dried chickpeas in plenty of water overnight (at least 12 hours) with half a teaspoon of baking soda.

Drain and rinse the chickpeas, then place them in a pot with the remaining baking soda and cover with water by 2 inches.

Bring to a boil, then simmer for 45-60 minutes until the chickpeas are very soft and the skins are falling off.

Drain the chickpeas and rinse with cold water; for the smoothest texture, gently rub them to remove the loose skins.

In a food processor, blend the tahini and lemon juice for 1 minute until creamy and whipped.

Add the garlic, salt, and cumin to the processor and blend again until fully incorporated.

Add the cooked chickpeas and olive oil, processing for 2-3 minutes until the mixture is thick and uniform.

While the processor is running, drizzle in the ice water one tablespoon at a time until the hummus reaches a light, fluffy consistency.
