Ingredients
- 2 cups Sushi Rice (cooked and seasoned)
- 2 sheets Nori (Seaweed sheets)
- 4 pieces Shrimp Tempura
- 1/2 cup Cucumber (julienned)
- 1 whole Ripe Avocado
- 2 tablespoons Unagi (Eel) Sauce
- 1 tablespoon Spicy Mayo(optional)
- 1 tablespoon Tobiko (Flying fish roe)(optional)
- 1 teaspoon Toasted Sesame Seeds
- 1 serving Pickled Ginger and Wasabi
Instructions

Place a half sheet of nori on a bamboo rolling mat covered with plastic wrap.

Spread 1 cup of sushi rice evenly over the nori, leaving no gap at the edges.

Flip the nori over so the rice is facing down on the plastic-covered mat.

Place 2 shrimp tempura and several cucumber strips horizontally across the center of the nori.

Roll the bamboo mat tightly from the bottom up to create a uniform cylinder.

Thinly slice the avocado and layer the slices overlapping across the top of the roll to look like scales.

Place the bamboo mat back over the avocado-topped roll and squeeze gently to adhere the avocado to the rice.

Slice the roll into 8 equal pieces using a very sharp, wet knife and drizzle with unagi sauce and sesame seeds.
