Ingredients
- 2 cups Plain Greek yogurt or thick curd
- 1 large English cucumber, grated
- 1 teaspoon Roasted cumin powder
- 1/4 teaspoon Kala Namak (Black salt)
- 1/2 teaspoon Sea salt
- 2 tablespoons Fresh cilantro, finely chopped
- 1 tablespoon Fresh mint leaves, finely chopped
- 1/4 teaspoon Red chili powder or paprika(optional)
- 1 small Green chili, deseeded and minced(optional)
- 1/2 teaspoon Sugar(optional)

Place the grated cucumber in a fine-mesh sieve and press gently to remove excess water so the raita doesn't become too runny.

In a large mixing bowl, whisk the yogurt until it is completely smooth and creamy.

Add the grated cucumber to the whisked yogurt and stir to combine.

Fold in the roasted cumin powder, black salt, sea salt, and sugar if using.

Add the chopped cilantro, mint leaves, and minced green chili, stirring gently to distribute the herbs.

Taste and adjust the salt or cumin according to your preference.

Transfer to a serving bowl and garnish with a pinch of red chili powder and a few fresh mint leaves.

Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
