Ingredients

Servings:4
  • 2 cups Plain Greek yogurt or thick curd
  • 1 large English cucumber, grated
  • 1 teaspoon Roasted cumin powder
  • 1/4 teaspoon Kala Namak (Black salt)
  • 1/2 teaspoon Sea salt
  • 2 tablespoons Fresh cilantro, finely chopped
  • 1 tablespoon Fresh mint leaves, finely chopped
  • 1/4 teaspoon Red chili powder or paprika(optional)
  • 1 small Green chili, deseeded and minced(optional)
  • 1/2 teaspoon Sugar(optional)

Instructions

  1. 1

Place the grated cucumber in a fine-mesh sieve and press gently to remove excess water so the raita doesn't become too runny.

  2. 2

In a large mixing bowl, whisk the yogurt until it is completely smooth and creamy.

  3. 3

Add the grated cucumber to the whisked yogurt and stir to combine.

  4. 4

Fold in the roasted cumin powder, black salt, sea salt, and sugar if using.

  5. 5

Add the chopped cilantro, mint leaves, and minced green chili, stirring gently to distribute the herbs.

  6. 6

Taste and adjust the salt or cumin according to your preference.

  7. 7

Transfer to a serving bowl and garnish with a pinch of red chili powder and a few fresh mint leaves.

  8. 8

Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
