Ingredients
- 2 cups Cooked chicken breast, shredded
- 4 pieces Large flour tortillas
- 2 cups Mexican blend cheese, shredded
- 1 medium Bell pepper, diced
- 1/2 cup Red onion, finely diced
- 2 tablespoons Olive oil
- 1 teaspoon Chili powder
- 1/2 teaspoon Cumin
- 1/2 teaspoon Garlic powder
- 1 pinch Salt and pepper
- 1 tablespoon Butter
- 2 tablespoons Fresh cilantro, chopped(optional)

Heat one tablespoon of olive oil in a skillet over medium heat and sauté the onions and bell peppers until softened.

Add the shredded chicken to the skillet along with the chili powder, cumin, garlic powder, salt, and pepper, stirring for 3 minutes to combine flavors.

Remove the chicken and vegetable mixture from the skillet and set aside in a bowl.

Wipe the skillet clean and melt a small amount of butter over medium-low heat.

Place one flour tortilla in the skillet and sprinkle a quarter cup of cheese evenly over the surface.

Spread a generous portion of the chicken mixture over one half of the tortilla and top with more cheese.

Fold the tortilla in half and cook for 2-3 minutes per side until the exterior is golden brown and the cheese is fully melted.

Repeat the process for the remaining tortillas, then slice into wedges and serve with salsa or sour cream.
