- 2 pounds Chicken wings, split into flats and drums
- 2 quarts Vegetable oil for frying
- 2/3 cup Frank's RedHot Original Cayenne Pepper Sauce
- 1/2 cup Unsalted butter
- 1/4 teaspoon Cayenne pepper
- 1/4 teaspoon Garlic powder
- 1 pinch Salt
- 4 stalks Celery sticks(optional)
- 1/2 cup Blue cheese dressing(optional)
- 1 tablespoon Cornstarch

Pat the chicken wings completely dry with paper towels to ensure maximum crispiness.

Heat the vegetable oil in a large pot or deep fryer to 375°F (190°C).

In a small saucepan over low heat, melt the butter and whisk in the hot sauce, garlic powder, and cayenne pepper until emulsified.

Lightly dust the wings with cornstarch and a pinch of salt, shaking off any excess.

Fry the wings in batches for 10-12 minutes until they are golden brown and reach an internal temperature of 165°F.

Remove wings from oil and drain on a wire rack or paper towels for 2 minutes.

Place the fried wings in a large stainless steel bowl, pour the warm buffalo sauce over them, and toss until evenly coated.
