Ingredients
- 500 grams Okra (Bhindi), washed and dried
- 3 tablespoons Vegetable Oil
- 1 teaspoon Cumin Seeds
- 2 medium Onions, thinly sliced
- 1 tablespoon Ginger-Garlic Paste
- 2 medium Tomatoes, chopped
- 1/2 teaspoon Turmeric Powder
- 1 teaspoon Kashmiri Red Chili Powder
- 2 teaspoons Coriander Powder
- 1/2 teaspoon Garam Masala
- 1 teaspoon Amchur (Dry Mango Powder)
- 1 teaspoon Salt

Wash the okra and pat them completely dry with a kitchen towel to prevent sliminess.

Cut off the ends and chop the okra into 1-inch pieces.

Heat 2 tablespoons of oil in a pan and sauté the okra on medium heat for 8-10 minutes until slightly browned and non-sticky, then remove and set aside.

In the same pan, add the remaining oil and splutter the cumin seeds.

Add sliced onions and sauté until they turn translucent and light golden brown.

Stir in the ginger-garlic paste and chopped tomatoes, cooking until the tomatoes soften and oil starts to separate.

Add the turmeric, chili powder, coriander powder, and salt; mix well with the onion-tomato base.

Fold in the sautéed okra, sprinkle with garam masala and amchur, and cook covered on low heat for 5 minutes before serving.
