- 3 large Very ripe plantains (black skin)
- 1/2 cup Vegetable oil
- 1/4 cup Granulated sugar
- 1 tablespoon Ground cinnamon
- 1 tablespoon Unsalted butter
- 1 pinch Salt
- 1/2 teaspoon Vanilla extract(optional)
- 1/8 teaspoon Ground nutmeg(optional)

In a small bowl, whisk together the granulated sugar, ground cinnamon, nutmeg, and a pinch of salt until well combined.

Peel the ripe plantains and slice them diagonally into 1/2-inch thick oval pieces.

Heat the vegetable oil and butter in a large non-stick skillet over medium heat until shimmering.

Place the plantain slices in the skillet in a single layer, being careful not to overcrowd the pan.

Fry the plantains for 2-3 minutes on each side until they are golden brown and the edges are slightly caramelized.

If using vanilla extract, drizzle it into the oil just before removing the plantains for an aromatic finish.

Remove the plantains from the skillet using a slotted spoon and immediately toss them in the cinnamon-sugar mixture while hot.
