Ingredients

Servings:4
  • 3 large Very ripe plantains (black skin)
  • 1/2 cup Vegetable oil
  • 1/4 cup Granulated sugar
  • 1 tablespoon Ground cinnamon
  • 1 tablespoon Unsalted butter
  • 1 pinch Salt
  • 1/2 teaspoon Vanilla extract(optional)
  • 1/8 teaspoon Ground nutmeg(optional)

Instructions

  1. 1

In a small bowl, whisk together the granulated sugar, ground cinnamon, nutmeg, and a pinch of salt until well combined.

  2. 2

Peel the ripe plantains and slice them diagonally into 1/2-inch thick oval pieces.

  3. 3

Heat the vegetable oil and butter in a large non-stick skillet over medium heat until shimmering.

  4. 4

Place the plantain slices in the skillet in a single layer, being careful not to overcrowd the pan.

  5. 5

Fry the plantains for 2-3 minutes on each side until they are golden brown and the edges are slightly caramelized.

  6. 6

If using vanilla extract, drizzle it into the oil just before removing the plantains for an aromatic finish.

  7. 7

Remove the plantains from the skillet using a slotted spoon and immediately toss them in the cinnamon-sugar mixture while hot.

  8. 8

Serve warm as a side dish or a dessert, optionally with a dollop of whipped cream or vanilla ice cream.
