  • 1 package Puff pastry sheet
  • 1 1/2 cups Whole milk
  • 1 cup Granulated sugar
  • 1/2 cup Water
  • 1/3 cup All-purpose flour
  • 6 large Egg yolks
  • 1 whole Cinnamon stick
  • 1 teaspoon Ground cinnamon
  • 1 strip Lemon peel
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

    Preheat your oven to 500°F (260°C) and grease a muffin tin or traditional tart molds.

    Roll the puff pastry tightly into a log, cut into 12 even pieces, and press each piece into the bottom and sides of the molds.

    In a small saucepan, bring the sugar, water, cinnamon stick, and lemon peel to a boil until it reaches 220°F (105°C) to create a simple syrup.

    Whisk the flour and salt into 1/4 cup of cold milk until smooth, then scald the remaining milk and whisk it into the flour mixture.

    Gradually pour the hot sugar syrup into the milk mixture, discarding the cinnamon stick and lemon peel.

    Whisk in the egg yolks and vanilla extract until the custard is smooth and slightly thickened.

    Fill the pastry shells 3/4 full with the custard and bake for 10-12 minutes until the pastry is golden and the custard has dark brown spots.

    Dust with extra ground cinnamon while still warm and serve immediately.
