  • 1/2 lb Ground Beef (80/20)
  • 12 pieces Slider Buns
  • 1 cup Fresh Parsley
  • 1/2 cup Fresh Cilantro
  • 3 minced Garlic Cloves
  • 2 tbsp Red Wine Vinegar
  • 1/3 cup Extra Virgin Olive Oil
  • 1/2 tsp Red Chili Flakes
  • 6 slices Monterey Jack Cheese
  • 1/2 thinly sliced Red Onion(optional)
  • 1 pinch Salt and Pepper

Instructions

    In a medium bowl, combine the finely chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, and chili flakes to create the chimichurri sauce.

    Season the chimichurri with salt and pepper to taste, then set aside at room temperature to allow flavors to meld.

    In a large mixing bowl, gently combine the ground chorizo and ground beef until just mixed; do not overwork the meat.

    Form the meat mixture into 12 small patties, slightly larger than the diameter of the slider buns to account for shrinkage.

    Heat a cast-iron skillet or grill over medium-high heat and cook the patties for 3-4 minutes per side until fully cooked through.

    During the last minute of cooking, place a small piece of Monterey Jack cheese on each patty to melt.
