Chicken Satay with Peanut Sauce

Ingredients
- 500 grams Chicken breast
- 200 ml Coconut milk
- 1 tsp Turmeric powder
- 1 tsp Coriander powder
- 2 tbsp Soy sauce
- 0.5 cup Peanut butter
- 1 tbsp Red curry paste
- 1 tbsp Brown sugar
- 1 tbsp Lime juice
- 12 pieces Bamboo skewers

Slice the chicken breast into thin strips.

In a bowl, combine half of the coconut milk, turmeric, coriander, and soy sauce. Marinate the chicken for at least 20 minutes.

Thread the chicken onto the bamboo skewers in a zigzag pattern.

For the sauce: In a small saucepan over medium heat, whisk together the remaining coconut milk, peanut butter, red curry paste, brown sugar, and lime juice until smooth and thickened.

Preheat a grill or grill pan over medium-high heat. Lightly oil the surface.

Grill the chicken skewers for 3-4 minutes per side or until cooked through and slightly charred.
