In a small bowl, whisk together the gochujang, gochugaru, soy sauce, and minced garlic to create the seasoning paste.
Arrange the sliced Spam, hot dogs, and chopped kimchi in a shallow wide pot or large skillet.
Pour the chicken broth over the ingredients and stir in the prepared seasoning paste until well combined.
Bring the pot to a boil over medium-high heat, then reduce to a simmer for 5 minutes to let the flavors meld.
Add both blocks of ramen noodles into the center of the pot, pushing them down slightly into the broth.
Cook for about 3 minutes until the noodles are tender but still have a slight bite.
Place the American cheese slices directly on top of the hot noodles and let them melt for 1 minute.
Garnish with freshly chopped green onions and serve immediately while the cheese is gooey.
