Char Siu Fried Rice

Ingredients
- 4 cups Day-old cooked Jasmine rice
- 1 1/2 cups Char Siu (Chinese BBQ Pork), diced
- 3 pieces Large eggs, lightly beaten
- 1/2 cup Frozen peas and carrots
- 3 stalks Green onions, sliced
- 2 cloves Garlic, minced
- 2 tablespoons Light soy sauce
- 1 tablespoon Oyster sauce
- 1 teaspoon Toasted sesame oil
- 1/4 teaspoon White pepper
- 3 tablespoons Vegetable oil

Break up the cold, day-old rice with your hands or a spatula to ensure there are no large clumps.

Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add the beaten eggs and scramble until just set, then remove and set aside.

Wipe the wok, add the remaining 2 tablespoons of oil, and increase heat to high. Add the garlic and white parts of the green onions, stir-frying for 30 seconds until fragrant.

Add the diced Char Siu pork and frozen peas and carrots to the wok, tossing for 2 minutes until the pork is slightly caramelized.

Add the rice to the wok. Use a pressing and tossing motion to coat the rice in oil and heat it through, about 3-4 minutes.

Drizzle the soy sauce, oyster sauce, and sesame oil over the rice. Add the white pepper and toss vigorously to distribute the seasoning evenly.

Fold in the cooked eggs and the remaining green onion tops, tossing for one final minute until everything is piping hot.

Serve immediately, garnished with extra green onions if desired.
