Caprese Quesadillas

Ingredients

  • 2 large Flour tortillas
  • 6 ounces Fresh mozzarella cheese
  • 2 sliced Roma tomatoes
  • 0.25 cup Fresh basil leaves
  • 1 tablespoon Balsamic glaze(optional)
  • 1 teaspoon Olive oil
  • 1 pinch Salt and black pepper

    Slice the mozzarella and tomatoes into thin rounds. Pat the tomatoes dry with a paper towel to prevent sogginess.

    Place one tortilla on a flat surface. Layer half of the mozzarella, followed by tomato slices and fresh basil leaves. Season with salt and pepper.

    Drizzle with balsamic glaze if using, then top with the remaining mozzarella and the second tortilla.

    Heat olive oil in a large non-stick skillet over medium heat.

    Carefully place the quesadilla in the skillet and cook for 3-4 minutes per side, or until the tortilla is golden brown and the cheese is completely melted.
