Bacalhau à Gomes de Sá

Ingredients
- 500 grams Salt cod (soaked and de-salted)
- 500 grams Potatoes
- 2 large Onions, thinly sliced
- 3 cloves Garlic cloves, minced
- 150 ml Extra virgin olive oil
- 2 large Hard-boiled eggs, sliced
- 12 pieces Black olives
- 2 tablespoons Fresh parsley, chopped
- 250 ml Milk
- 1 teaspoon Black pepper(optional)

Place the de-salted cod in a pot, cover with boiling water, and let it sit for 20 minutes; then drain, remove skin and bones, and flake into large chunks.

Soak the flaked cod in warm milk for 1.5 to 2 hours to soften the texture and flavor.

Boil the potatoes in their skins until tender, then peel and slice them into rounds about 1cm thick.

In a large skillet, sauté the onions and garlic in half of the olive oil over medium-low heat until soft and golden brown.

In a greased baking dish, layer the sliced potatoes followed by the flaked cod and the sautéed onion mixture.

Drizzle the remaining olive oil over the top and bake in a preheated oven at 180°C (350°F) for 15 to 20 minutes.

Remove from the oven and garnish immediately with the sliced hard-boiled eggs, black olives, and fresh parsley.
