  • 1 unit Large onion, finely chopped
  • 1 unit Green bell pepper, diced
  • 1 tablespoon Fresh ginger, grated
  • 3 unit Garlic cloves, minced
  • 2 unit Bird's eye chilies, chopped
  • 2 tablespoons Mild or hot curry powder
  • 3 unit Large carrots, grated
  • 410 grams Baked beans in tomato sauce
  • 1 teaspoon Salt and black pepper
  • 1 tablespoon Fresh thyme or coriander(optional)

Instructions

    Heat the vegetable oil in a large pan over medium heat.

    Add the chopped onion and green bell pepper, sautéing until the onion is translucent and soft.

    Stir in the garlic, ginger, and chopped chilies, cooking for another 2 minutes until fragrant.

    Add the curry powder and stir well to coat the vegetables, allowing the spices to toast for 1 minute.

    Add the grated carrots to the pan and mix thoroughly, cooking for about 5-8 minutes until the carrots are softened but still have a slight bite.

    Pour in the canned baked beans (including the tomato sauce) and stir to combine.

    Simmer the mixture on low heat for 5-10 minutes, allowing the flavors to meld together.
