- 2 lbs Pork shoulder (butt) or pork neck, cut into long strips
- 4 tbsp Maltose (or honey)
- 1 cube Fermented red bean curd
- 2 tbsp Hoisin sauce
- 2 tbsp Light soy sauce
- 1 tbsp Dark soy sauce
- 1 tbsp Shaoxing wine
- 1 tsp Five-spice powder
- 3 tbsp Granulated sugar
- 3 cloves Minced garlic
- 1 tsp Toasted sesame oil

Whisk together the red bean curd, hoisin, soy sauces, wine, five-spice, sugar, garlic, and sesame oil in a large bowl.

Place the pork strips into the marinade, ensuring they are fully coated, and refrigerate for at least 12 hours or overnight.

Preheat your oven to 400°F (200°C) and place a tray filled with water at the bottom of the oven to keep the meat moist.

Arrange the pork on a wire rack over a foil-lined baking sheet and roast for 20 minutes.

While roasting, mix the maltose with a tablespoon of hot water or leftover marinade to create the glaze.

Remove the pork, brush generously with the glaze, and flip the pieces over.

Roast for another 15-20 minutes, glazing every 10 minutes, until the edges are slightly charred and caramelized.
