In a medium bowl, whisk together the soy sauce, honey, rice vinegar, ginger, garlic, sesame oil, and cornstarch until smooth.
Cut the salmon into uniform 1-inch cubes and place them into the marinade bowl.
Toss the salmon gently to coat and let it marinate for at least 15 minutes at room temperature.
Preheat your air fryer to 400°F (200°C) for 3 minutes.
Lightly grease the air fryer basket and place the salmon bites in a single layer, ensuring they do not touch.
Air fry for 7 to 9 minutes, shaking the basket halfway through, until the edges are caramelized and crispy.
Remove the salmon from the air fryer and drizzle with any remaining thickened sauce if desired.
Garnish with sesame seeds and sliced green onions before serving over rice or greens.
