  • 2 lbs Beef Short Ribs (bone-in)
  • 4 tbsp Massaman Curry Paste
  • 2 cups Coconut Cream
  • 1 cup Beef Broth
  • 2 large Waxy Potatoes (cubed)
  • 1 cup Pearl Onions (peeled)
  • 1/2 cup Roasted Peanuts
  • 3 tbsp Palm Sugar
  • 3 tbsp Fish Sauce
  • 2 tbsp Tamarind Paste
  • 1 piece Cinnamon Stick
  • 3 pods Star Anise

Instructions

    Sear the beef short ribs in a heavy-bottomed pot over high heat until browned on all sides, then remove and set aside.

    Lower the heat and add half of the coconut cream, frying it until the oil begins to separate from the cream.

    Add the Massaman curry paste to the coconut oil and fry for 2-3 minutes until fragrant and the color deepens.

    Return the beef ribs to the pot and add the remaining coconut cream, beef broth, cinnamon, and star anise.

    Cover and simmer on low heat for 2 hours, or until the beef is tender and starting to pull away from the bone.

    Add the potatoes, pearl onions, and peanuts, then continue to simmer for another 25-30 minutes until potatoes are soft.

    Season the curry with palm sugar, fish sauce, and tamarind paste, adjusting for a perfect balance of sweet, salty, and sour.

    Let the curry rest for 10 minutes before serving with jasmine rice to allow the flavors to fully meld.
