Ingredients
- 4 pieces Beef cube steaks
- 1/2 cup Bourbon whiskey
- 3/4 cup Dark brown sugar
- 1/4 cup Apple cider vinegar
- 1 tablespoon Smoked paprika
- 1 1/2 cups Buttermilk
- 2 cups All-purpose flour
- 1/2 teaspoon Cayenne pepper
- 1 tablespoon Garlic powder
- 3 cups Peanut oil for frying
- 2 tablespoons Worcestershire sauce
- 3 tablespoons Tomato paste
Instructions
- 1
In a small saucepan, combine bourbon, brown sugar, apple cider vinegar, tomato paste, and Worcestershire sauce; simmer over medium-low heat until reduced to a thick, syrupy glaze.
- 2
Whisk the buttermilk with a pinch of salt and smoked paprika in a shallow bowl, and place the flour mixed with garlic powder and cayenne in a second bowl.
- 3
Dredge each cube steak in the flour, then the buttermilk, and finally back into the flour, pressing firmly to create a thick, craggy crust.
- 4
Rest the breaded steaks on a wire rack for 10 minutes to allow the coating to set, which prevents it from falling off during frying.
- 5
Heat the peanut oil in a heavy cast-iron skillet to exactly 350 degrees Fahrenheit.
- 6
Fry the steaks for 3-4 minutes per side until the internal temperature reaches 145 degrees and the exterior is deep golden brown.
- 7
Drain the steaks briefly on paper towels, then immediately brush both sides generously with the hot bourbon BBQ glaze while the crust is still porous.
- 8
Serve immediately with a final drizzle of glaze and a sprinkle of flaky sea salt.
